Pick Stitching

Please can anyone let me how pick stitching is done so that it doesn't show as an overlapping backstitch on the underside? I attach a photo to show what I mean with oversize stitches in white basing cotton for clarity. I think that this would look unsightly on the coat edges. Have I misunderstood how to create the stitch? Does it just pick up a thread of the undermost layer like a pad stitch on the lapel, rather then go all the way through?

Not everyone uses this distinction, but I've heard "pick stitching" used when the stitch does not go through to the underside and "prick stitching" used when it does.
