You use 2 1/4" in the drafting video but the coat notes say 2 1/2", which is correct and why?

Both technically.
What we are aiming for here is the average shoulder slope.
Some say the average shoulder angle is 2 1/4" and others say 2 1/2".
But that all depends on what you think the average chest is.
If I thought the average chest of my clients was 44, I would have an average shoulder angle of 2 1/2.
But
If I thought the average chest of my client was 40, then the shoulder angle would be 2 1/4".
We add a 1/4" to the angle for every 1" of width we add to the shoulder.
So , as a shoulder gets longer, it does not get squarer on the draft.
Add a 1/2" to this angle, and you have the back shoulder angle.
